Spaghetti, Cherry Tomatoes, Olive Oil, some garlic and a bit of balsamic. That simple.
Mix some diced cherry tomatoes, olive oil, chopped parsley, minced garlic and balsamic vinegar in a pot. Pinch of salt. Cook the pasta al dente in salty water. Strain the pasta. Always delicious, especially in the summer when the tomatoes are fresh off the vine. I miss my big New England garden. Love the photos.
I couldn’t wait till summer but we get our tomatoes from Mexico where is summer all year round π I’ve been craving simple pasta dishes lately. Thanks for the nice compliment! I will be hopefully moving back to LA soon and I will try to find a place where I can have a little garden! so rewarding!
